Rice with Mushrooms, Squid, and Artichokes

This month's Daring Cooks challenge was hosted by Olga, of Olga's Recipes. The recipe comes from Jose Andres' PBS show, and is demonstrative of Catalan cooking?...

S and I were excited about this month's challenge, as we're big fans of both the PBS show and Spain. And anytime I have an excuse to add chorizo to anything, I'll take it.

We unfortunately lacked the proper tools to make the alioli - either by hand or a la moderna, but plan to try the mortle and pestle method as soon as we can. I can only imagine that the addition of alioli would have ramped up the deliciousness of this dish.

S says it tastes like Spain in a pan. Solid.

We followed the rest of the directions to a T with the exception of the cuttlefish - which we replaced with squid, tentacles and all. Bingo. This is the first time we've cooked squid and we managed to not make it rubbery. Hopefully it's reproducible.

I'm psyched that we don't have to make a freakin powder this month!
















The Sofregit... I think it was a little heavy on the green pepper. I may have cooked it a little too long as well. It seemed a little dry to me.
















The finished product... I really think the chorizo adds a lot to the dish - but then again, chorizo adds a lot to whatever it's in.
